Week 5 & 6 Donna Hay: Brunch

Aw, Easter Brunch! I have been so busy with work that I had completely forgotten about Easter. When I realized mid-week that Sunday was Easter and no plans had been discussed I decided it was the perfect time to make a Donna Hay brunch. My sisters and I headed over to my mother's house and while they gardened I prepared two of Donna Hay's brunch menus. Well, most of them. One had all dishes that my vegetarian sister could not eat and the other had no protein which was not good for my other sister and I so I combined the menu and cut a few recipes out. Here were the prospective menus and below is what I actually made.

Late Brunch: (#1)

Main

three cheese frittata

Sides

crispy bacon rosemary ties

herb roasted tomatoes

Dessert

apple and strawberry galettes (no made)

Brunch Date: (#2)

Main

lemon and sugar puff pancakes

berry bircher (not made)

raspberry and mango in rosewater syrup

Side

almond and maple yogurt

See below for pictures!

  2. Use 8 sprigs of new growth rosemary. (Older growth tends to have very hard sticks which does not make eating it fun.) Wrap 8 long pieces of bacon around the rosemary. Bake in an over at 355 degrees for about 20 minutes or until the bacon appears done. Enjoy!
