Week 4 Donna Hay: Mediterranean Meal

My life has been insanely busy lately. It is tax season and that means long hours at work and working weekends. Last Sunday I took a day off and did nothing. It was spectacular and I highly recommend it. That evening was crowned with my 4th week of Donna Hay dinner.

The meal:

Starter:

Goat's cheese and sweet capsicum (bell pepper) salad

Main:

Schnitzel with Black Olive Crust

Side:

Garlic and Tomato Simmered Beans

Dessert:

Warm Apple Cinnamon Crumb Cakes












As I am currently pressed for time I will try to summarize the meal. Starter: the peppers were amazing and the dressing is something I am definitely making again. Very vibrant colors and flavors. Main: Soft flavors, but I liked it. Apparently schnitzel is to Germany as parmesan is to Italy. Great size of meat. Super easy to make. And the black olives offered a background flavor that just made you go "hmmm". Side: My least favorite. The tomato texture was not my favorite and the beans barely had a hint of flavor. I might be spoiled though because I make a bean and tomato side from a recipe my aunt gave me and those are out of this world. Dessert: Basically it was a super easy to make apple cake that was moist and light and flavorful. Probably our favorite dessert so far. One thing I keep noticing is that the book says that it makes "4 servings" but when I make it the servings seem to be closer to 6-8. Just something to consider.
